1. History

Recioto della Valpolicella is one of the oldest and most esteemed sweet red wines of Italy. Originating in the Valpolicella region of Veneto, this wine’s history dates back to ancient Roman times when it was revered as a luxurious, rich dessert wine. The name “Recioto” comes from the Italian word recie (ears), referring to the uppermost, ripest grapes on the vine, which are traditionally selected for this wine. Produced primarily from Corvina, Rondinella, and Molinara grapes, the wine is made using the appassimento process, in which the grapes are dried after harvest to concentrate their sugars and flavors. Fermentation is halted before all the sugar is converted to alcohol, resulting in a sweet, velvety wine with flavors of dried cherry, plum, chocolate, and spice. Today, Recioto della Valpolicella enjoys DOCG status and stands as a testament to the region’s centuries-old winemaking traditions.

2. Pairing

Recioto della Valpolicella’s lush sweetness and intense flavors make it a perfect match for indulgent desserts and strong cheeses.

  • Dark Chocolate Desserts: The wine’s dried fruit and cocoa notes complement the richness of chocolate mousse, chocolate torte, or chocolate truffles.

  • Spiced Cakes and Cookies: Its sweet, spicy profile enhances holiday treats like gingerbread or cinnamon-spiced cookies.

  • Cheesecake with Berry Sauce: The wine’s bright acidity and ripe berry flavors balance the creamy texture and tart fruit of the cheesecake.

  • Blue Cheeses (Gorgonzola or Roquefort): The wine’s natural sweetness and concentrated fruit provide a harmonious contrast to the salty, pungent character of blue cheeses.

  • Dried Fruits and Nuts: Recioto’s own raisin and nutty flavors resonate beautifully with a simple plate of dried figs, almonds, and walnuts.

3. The Top Wineries

  • Giuseppe Quintarelli: Quintarelli’s Recioto is legendary, renowned for its complexity, elegance, and unparalleled craftsmanship.

  • Allegrini: A producer known for creating refined Recioto wines that highlight the region’s rich winemaking history.

  • Bertani: A historic estate that produces Recioto della Valpolicella of exceptional quality, demonstrating the full potential of this traditional style.

4. The Notes of Master Chef Gianluca Deiana Abis

Recioto della Valpolicella is more than just a wine—it’s an experience. For me, it represents the height of indulgence, a liquid dessert that embodies the passion and artistry of Veneto’s winemakers. I love how it pairs so beautifully with chocolate, blue cheese, and spiced desserts, transforming an ordinary meal into a decadent celebration. Recioto is a wine to savor slowly, to appreciate the time and skill that goes into its creation, and to share with friends and family as a special treat. In every sip, you can taste the history and tradition that make this wine a true treasure.
